Tuba Esatbeyoglu is Professor & Executive Director, Institute of Food Science and Human Nutrition, Hannover, Germany. Esatbeyoglu´s group is dealing with the analysis of secondary plant metabolites and their biological activity in vitroand in cell culture studies. The group is working on extraction, analytical characterization by chromatography and mass spectrometry, isolation by countercurrent chromatography, structure elucidation, toxicological safety and cellular bioavailability and bioactivity (anti-oxidant and anti-diabetic) of food and food compounds as well as the impact of food processing (thermal and non-thermal techniques). The group focuses on sustainability and explore the use of side-streams as a source for isolation and synthesis of bioactive compounds. Taking into account the current consumer trends, the group develops high-quality and safe foods that are rich in phytochemicals and have health-promoting effects.
